Its name doesn’t hint to its natural aroma, but benzaldehyde adds an almond scent to food goods. And as its full name is something of a mouthful, it is often referred to as bitter almond oil instead. While benzaldehyde is an oily, colourless liquid, the powder is white in colour and fine and free-flowing.
Despite the chemical-sounding name, we try to obtain benzaldehyde from natural sources. Cherries, peaches and carnation flowers are all a good source, and it can be derived from the oil of bitter almonds.
Its almond scent makes it a winner for the cosmetic and personal care industry, where it is used in perfumes, shampoos and bath and body products.
The secret to the end scent is how it is blended: when undiluted it is pungent and bitter, but when highly diluted or combined with sweeter scents, it takes on a pleasing sweet almond fragrance.
There are some other niches for this all-natural ingredient. Beekeepers have used it to repel the insects when they need to move them on.
Other uses have seen it appear in the pharmaceutical and photography industries. It has been used in antibiotics and insect repellents as well as photographic chemicals and dyes.
