    Cinnamon (Cinnamomum verum) (often referred to as True Cinnamon) is a warming spice with a sweet flavour and fragrant scent. It’s sourced from the bark of the Sri Lankan cinnamon tree, which grows natively in Sri Lanka where most of the world’s current supply comes from. It is also native to the neighbouring Malabar coast of India and parts of Myanmar. It is now also cultivated in other parts of the world, such as South America, the West Indies and Indonesia. The other related genus Cinnamomum such as Cinnamomum cassia, and Indonesian cinnamon come from Cinnamomum burmannii which is commonly known as Cassia. This is native to Indonesia which produces the majority of the world’s crop. The crop is also grown in China and Vietnam.     How is it used?

    It is known that some 2,000 years ago the ancient Egyptians used Cinnamon to help preserve as well as flavour meat. Indeed, Cinnamon bark has many versatile uses. It can be used whole, crushed, ground or even distilled into an essential oil. It’s used to flavour hot, cold and alcoholic drinks. It’s also used as a warming, delicious spice in both sweet and savoury recipes, including baked goods. In essential oil form, it can be added to fragrances, food and drinks.
