    Cumin seeds are a versatile spice used in various culinary traditions worldwide. Not only used for seasoning and to add flavour in stews and curries they are some times tempered (fried in ghee or oil to release the flavour, this seasoned oil is then added to dhals or rice, alongside coriander, turmeric and chilli). In the Middle East they are often added to bread dough to add an aromatic flavour to naans and flatbreads.

    When using cumin seeds, it's common to toast them in a dry pan over medium heat until fragrant before grinding or using them whole. This releases their essential oils and enhances their flavour.
