Bitter almonds are the seeds of the Prunus dulcis tree, featuring a hard, woody drupe shaped shell encasing the seed. The seeds are light brown with a rough texture and a distinctively strong, bitter flavour due to the presence of amygdalin. They emit a subtle, marzipan-like aroma when broken or ground. Bitter almonds are typically found in Mediterranean climates, including regions in Spain and Italy. They are used whole or ground in various culinary, health applications and cosmetics, but must be processed correctly to remove toxic compounds like hydrogen cyanide. Bitter almonds are also known as “amygdalus communis” and are commonly used in the production of almond oil, liqueurs, and flavouring extracts. Bitter Almond nuts contain 35-45% oil consisting of fatty acids, flavonols and triglycerides.
