Also known as Capalaga, Ilachi, True Cardamom and Ceylon Cardamom, Green Cardamom is used to spice cuisine to add a distinctive piney flavour with hints of lemon and mint. Many liken the taste to a combination of ginger and cinnamon – two popular sweet spices. Cardamom is part of the family Zingiberaceaer. When ground into a powder, it’s ready to apply to an abundance of international sweet and savoury dishes.
Native to the forests in southern India, cardamom is also produced in Sri Lanka, Guatemala, and more across the tropics, with Guatemala being the world’s largest exporter. The seed pods are light green and spindle-shaped, with a thin, papery outer shell. Due to the time-consuming harvesting process, this spice is one of the more expensive, although not quite as pricey as saffron. The plants begin bearing pods after around three years and are hand-picked before they’ve reached full maturity.
They contain volatile oils such as 1,8-cineole and alpha-terpinylacetate.
How is it used?
With a history spanning 4000 years, cardamom is considered one of the oldest spices. In fact, due to the slight minty flavour, the Ancient Egyptians were known to chew them to keep their breath fresh.
When ground, cardamom pods make an ideal spice addition to meat and vegetable-based stews and rice dishes. They are most commonly associated with Indian, Thai and Middle Eastern cuisine. However, green cardamom is also used to make baked goods in Scandinavian countries, including the quintessential ‘pulla’ plaited sweet bread, which is a staple across Finland. Cardamom is a staple ingredient in the garam masala blend used to spice Indian curries. As for drinks, they are a key component of masala chai and Turkish coffee and are distilled to craft gin with complex notes of citrus, pine and mint.
A common addition to ancient Indian and Chinese home remedies, it’s believed that cardamom can relieve digestive problems.
