A cost-effective option for cooking or distilling, mixed yellow cardamom pods carry the same punchy flavour as green cardamom pods but appear more yellow and can be smaller. This variety is also known as MYQ (mixed yellow quality) cardamom.
Predominantly produced in Guatemala, this spice is also cultivated in Sri Lanka and India, the latter being a native source. This spice is made from the seeds of several plants in the genera Elettaria, part of the family Zingiberaceae.
How is it used?
This spice has a long legacy that stretches back 4000 years. The Ancient Egyptians used them in embalming rituals, and were also known to chew them to make their breath smell minty. Aside from treating bad breath, ancient civilisations also used them to treat asthma and indigestion.
With a distinctive mint and lemon flavour, mixed yellow cardamom is used in cuisine around the world, particularly Indian, Middle-Eastern and Scandinavian. While the pods are not typically consumed unless ground, due to their tough, fibrous texture, the seeds can be added to an abundance of dishes, both sweet and savoury.
Cardamom is also used in the distilling of gin and liqueurs to infuse the natural notes of lemon and mint.
