Black ground salt, also known as Sanchar or Kala Namak, is a naturally occurring mineral-rich Himalayan rock salt, traditionally used in South Asian cuisine and cultural practices. The salt is mined from volcanic regions, then ground to a fine consistency, retaining its characteristic dark grey / pink-grey to black colour and distinctive sulfurous aroma.
Black salt is thought to naturally contain trace minerals and elements (primarily sodium chloride with sulfur, iron, and magnesium) that contribute to its unique flavour and aroma (which is why, in some vegan dishes, it’s used to supplement an egg flavour). It has a slightly sulphurous scent and a tangy, salty taste that makes it popular in culinary applications, seasonings, and spice blends.
The salt is supplied ground for ease of use, while whole crystals may also be available for other applications.
