    Thyme, a timeless culinary herb from the Lamiaceae family, has been cherished by various cultures for centuries. Native to the Mediterranean, and now cultivated widely, this herb is loved for its bold flavour and rich history.

    Thyme is a small bushy herb with a distinct flavour and aroma. Its tiny, elliptical leaves are greenish-grey in colour. Thyme is a plant that contains flavonoids, polyphenolic acids, polysaccharides, tannins, and many volatile oils, the main one being thymol.

    Thyme’s history is as rich as its flavour. Ancient Egyptians used it for embalming, while Greeks adored it in baths and temples, believing it to be a source of courage. Romans spread thyme throughout Europe, using it to purify homes and add a delightful aroma to their culinary creations. In the Middle Ages, thyme was tucked beneath pillows to ward off nightmares and given to knights for bravery. It was also used in funeral rites, symbolising safe passage to the afterlife.

    Rubbed thyme, unlike its ground counterpart, is created by gently rubbing dried thyme leaves into a coarse powder.
