Also known as Chinese cassia bark, cassia lignea is a close relative of true cinnamon and is native to China and Southeast Asia. Part of the Lauraceae family, Cassia is a small, bushy evergreen plant that is thicker and darker than cinnamon bark and contains 1-2% cassia oil, which is often applied to essential oil blends. The bark is in quilled pieces and the taste is similar to cinnamon but more bitter.
In addition to volatile oils, Cassia also contains glycosides and polyphenols.
The cassia plant grows to around 25 to 50 feet, and the bark is harvested when the plant is six-years-old. China and Vietnam are the biggest cultivators of cassia, with China devoting around 60,000 acres, which equated to 34% of the world’s production in 2022.
How is it used?
Cassia lignea bark is used to make essential oil through steam distillation. Cassia bark was used in cooking long before cinnamon was, and it is often used as an alternative to cinnamon. It’s applied to sweet and savoury dishes to add a spicy, nutty flavour, particularly chocolate and liqueurs. When compared to other cassia varieties, Chinese cassia is sweeter than Indonesian and spicier than Ceylon.
In Asian cuisine, it’s a common ingredient found in stews, casseroles and curries and is considered a great seasoning choice for meat and poultry. The bark can be steeped in milk or cream for desserts, or placed into stewed savoury dishes to infuse with the sauce or broth.
It’s also found in perfumes, cosmetics, toothpastes, mouthwashes and home products such as oil burners and diffusers. Its warm, sweet and spicy scent makes it a popular choice for winter-inspired home fragrances.
The essential oil is believed to contain a range of health benefits. Cassia is believed to improve insulin sensitivity, which could help to regulate blood sugar levels. It’s also thought to aid digestion and offer anti-inflammatory properties. Historically, it has been used to treat vascular disorders.
