Angelica seeds are small, oval-shaped, and light brown with a smooth, slightly ridged texture. They have a strong, aromatic scent reminiscent of anise and a warm, sweet flavour with a peppery undertone. Angelica seeds are harvested from the Angelica plant, which is a common garden plant commonly found in the cooler climates of Northern Europe and Asia, particularly in moist, forested, and mountainous areas. It flowers in June to July and has a hollow stalk with greenish white flowers. The seed is rich in volatile oils, macrocyclic lactones, phthalates, coumarins, and flavonoids. Also known as garden angelica or wild celery, angelica seeds are primarily used in herbal liqueurs, flavouring for baked goods, and digestive tonics.
