Cassia sticks whole are long, rolled pieces of the dried bark of the Cinnamomum cassia tree, featuring a reddish-brown colour and a rough, fibrous texture. They have a strong, warm, spicy aroma and a sweet, slightly bitter taste. Cassia is typically grown in tropical regions, particularly in China and Southeast Asia. The bark contains essential oils, cinnamaldehyde, and glycosides. Whole cassia sticks are used in culinary applications, such as flavouring stews, teas, and desserts, as well as in traditional remedies for their believed warming and digestive properties. It has been used in Chinese medicine for vascular disorders. The oil has been used for cosmetics, toothpastes and mouthwashes historically.
