    Commonly known as German chamomile, Hungarian chamomile, wild chamomile, blue chamomile and scented mayweed, chamomile is an annual plant of the family Asteraceae. Found in temperate regions of Europe and Asia, the flowers look like small daisies and are in bloom throughout the summer months – typically June-August.

    One of the oldest flowers, records date as far back as Ancient Egyptian and Ancient Greek times, with uses including relieving red and dry skin. In fact, their name derives from the Greek word for ‘earth apple’, which refers to the flower’s apple-like scent when crushed. The other variety of chamomile, known as Roman chamomile, is harvested less often for food or drink due to its somewhat bitter taste.

    It has a bitter and aromatic taste. Chamomile flowers contain volatile oils, flavonoids, spiroethers, coumarins and polysaccharides.

    Chamomile is sold in a number of cut sizes: cut, cut fine, fines, powder and 5:1 extract powder.

    How is it used?

    Most closely associated with a relaxing bedtime tea infusion, chamomile powder has an abundance of other uses. Chamomile is cultivated around the world for the production of drinks, food, cosmetics and herbal remedies.

    For herbal remedies, it’s believed that chamomile can help relieve symptoms of skin irritation and gastrointestinal problems. It’s most commonly consumed as a tea and is one of the most popular herbal teas in the world. Rich in antioxidants and with anti-inflammatory properties, it’s believed that this flower can also soothe anxiety and promote sleep.

    A combination of a pleasant apple scent with potential anti-ageing properties has made chamomile a popular natural ingredient for skincare products, from deodorant to soaps and cleansers. For the skin, chamomile can be added to gel or cream-based products.

    In food, this flower can be used in much the same way as other edible flowers. It’s particularly suitable for adding a punchy floral flavour and apple scent to gin-based cocktails, beers and vanilla-flavoured desserts. Due to their apple-based aroma, they are also a natural pairing for apple pie, crumble or sorbet.

    Due to their crisp apple scent, they are also used in aromatherapy essential oils, which can be used in home fragrances and diffusers.
