    Associated with sleep and relaxation, chamomile flowers provide a delicate floral taste that can be added to herbal teas, beers, alcoholic cocktails, desserts and cosmetic products. Also known as German chamomile, this ancient herb is a member of the Asteraceae family, and the flowers resemble small daisies.

    Due to their apple-like scent, chamomile flowers are named after the Greek for ‘earth apple’. The plant is native to Europe and Asia but has since spread to more temperate regions. In the UK, the flowers can be seen along coastal cliffs, meadows and fields between June and August.

    It has a bitter and aromatic taste. Chamomile flowers contain volatile oils, flavonoids, spiroethers, coumarins and polysaccharides.

    How is it used?

    Over the years, chamomile has had many uses. In Elizabethan times, they were planted as lawn seats for their cushioning feel and pleasant fruity aroma that’s released when crushed. They were also traditionally used to relieve symptoms of the common cold.

    Today, one of their most well-known uses is as a calming tea infusion. However, these flowers have a wealth of other applications. In skincare, they can be added to cleansers and soaps – the antioxidants are believed to help regenerate the skin and provide anti-ageing benefits.

    Thanks to its pleasant aroma, flavour and appearance, it makes a great garnish or infusion for gin-based cocktails. For desserts, it works particularly well with vanilla and can be infused with ice cream to add a vibrant, floral note. Due to their apple-based aroma, they are also a natural pairing for apple pie, crumble or sorbet.

    Due to their crisp apple scent, they are also used in aromatherapy essential oils, which can be used in home fragrances and diffusers.

    Rich in flavonoids, these are packed with antioxidants, which are thought to have positive effects on cholesterol and blood pressure. It’s believed that chamomile may also help to soothe muscle spasms and anxiety. Traditionally, Chamomile has also been used to treat insomnia, gout sciatica, indigestion and diarrhoea.
